The cashew (Anacardium occidentale) is a tropical, evergreen tree of the Anacardiaceae family, native to South America and famous for producing a kidney-shaped seed commonly called a cashew nut. Botanically, the nut is a drupe that grows on the bottom of a fleshy, pear-shaped, yellow-red edible "cashew apple". The edible kernel inside is protected by a toxic shell containing anacardic acid.
